Paella in a Can? If You Have the Proper Pan.
A new paella kit made in Spain has hit the shelves at Despaña Brand Foods, a retail and wholesale source for Spanish foods. It consists of a can of enough seasoned seafood broth with some bits of seafood to serve three or four with precisely measured rice. The proper paella pan, at 34 centimeters (13 ½ inches), is $20; a skillet that size can be used. The kit is from a company affiliated with the chef Rafa Margós, in Valencia; he prepares the broth ingredients traditionally over a wood fire. With the step-by-step instructions and a pinch of salt you get a fine, though simple, pan of paella rice. (A vegetarian version with a rich vegetal broth is also available.) Tuck your own additions — shrimp, diced piquillo peppers, artichoke hearts — into the rice as it cooks to enhance things. If you cannot use a wood-fired grill, then a gas or even electric stove will do.
