Jimboy’s Tacos, the iconic local restaurant franchise that began as a trailer on the shores of Lake Tahoe, is celebrating the fourth annual Sacramento County Jimboy’s Day on September 25. The beloved hometown brand received the honor from Sacramento County officials in 2018 for serving as an integral part of the community.

“We are proud to be part of the fabric of Sacramento for nearly 70 years, and we owe so much of our success to the community that has helped our restaurants thrive,” said Erik Freeman, CEO of Jimboy’s Tacos and grandson of founder Jim “Jimboy” Knudson. “It’s truly an honor to be recognized by this great city and see my grandfather’s legacy honored for years to come.”

Jimboy’s Tacos began in 1954 when Knudson created The Original American Taco with seasoned ground beef, crispy lettuce and shredded cheese in a grilled stone-ground corn tortilla shell dusted with a liberal coating of Parmesan cheese.

Since then, Jimboy’s Tacos has expanded into more than 40 locations with restaurants in Sacramento, Reno, and Fort Worth, TX and continues its commitment to using fresh, quality ingredients. Every menu item is made-to-order and cooked from scratch daily, in small batches, to ensure freshness and premium flavor.

Jimboy’s Tacos also remains committed to giving back to the local community, a philosophy that was held strongly by Knudson and his wife Margaret. In 2015, the company established the “Dine and Donate” fundraising program which invites the community to dine at their neighborhood Jimboy’s Tacos to support a local organization. Since the program’s inception, Jimboy’s Tacos has raised funds for area schools and key community organizations such as the Yolo County Food Bank and Friends of the Folsom Zoo.
