Jean-George Vongerichten Polishes Up the Tin Building

The prolific restaurateur Jean-Georges Vongerichten has reached a new pinnacle with this dazzling food hall in the Tin Building. With the Howard Hughes organization and the design team at Roman and Williams, Mr. Vongerichten, 65, has added polish to this once decrepit building in the former Fulton Fish Market area. The 53,000-square-foot setting houses market stalls, six full-service restaurants, casual cafes, bars and ample seating, to the tune of nearly $200 million. “I could have made this all French, but this is New York,” he said. You’ll find laksa noodles alongside packaged broth for pho, and Indian dosas sharing a stand with sweet and savory crepes. An area for coffee and baked goods sells some of the 21 different breads made on premises; Double Yolk serves egg sandwiches in the morning and caviar after 5 p.m. The Central Market — offering seafood, meats, cheeses, charcuterie, pasta and produce from local farmers — is surrounded by a flower shop; a wine bar; candy store; Fulton Fish Co.; an oyster bar; Shikku, a sushi bar also selling sushi to-go; and T. Brasserie.

Upstairs is a cocktail bar; the plant-based Seeds & Weeds; Beer Here! for brews on tap and sausages; the House of Red Pearl, a plush Chinese restaurant; an Italian restaurant cheekily named Frenchman’s Dough; Taquito, serving Mexican fare; and shops, several stocked with goods bearing the Jean-Georges Vongerichten Tin Building label. More than 300 employees staff the kitchens, but twice that number are needed to open full-time.
